Being hungry and stuck in traffic with a bladder that’s about to burst? Absolute hell

How I managed to make it home after sitting in traffic for an hour without chewing off a limb or making a not-so-pleasant mess in my car, I’ll never know, but there you have it; miracles happen every day, and thank goodness for that is all I can say…

The beauty of nature is a subtle miracle that often goes unnoticed in our fast paced lives. We need to slow down and smell the flowers once in a while.

I know that it’s technically still summer and all, but with the days slowly growing shorter and chillier, and school right around the corner, it’s already beginning to feel a lot more like fall. Not that I’m complaining; fall is my favourite season and I look forward to its arrival every year. There’s just something incredibly comfy and cozy about the soup and sweater weather that fall provides. And that’s saying nothing about the gorgeous colours and seasonal produce… Love. it. all.

But let’s go back to soup for a second or two…

With our weather being the way it’s been lately [read: cold, cloudy, wet], I’ve been finding myself craving more and more of the comfort and warmth of a homemade bowl of soup. I enjoy a variety of different soups, but one of my favourites is inspired by my favourite season; an autumnal blend of pumpkin and apple, with plenty of warming spices like curry, cinnamon, ginger, and cloves to take off the chill. I know it’s a bit early yet, but fall will be here before we know it, and this curried-apple pumpkin soup is a great way to welcome the new season. I hope you enjoy…

Curried – Apple Pumpkin Soup

This soup is wonderfully thick and and extremely flavourful. I usually just eat it straight up, but it also tastes great with the addition of a grain or as a base for lentil stew.

Ingredients (serves 1)

  • 1 cup reduced sodium vegetable broth
  • ½ cup canned pumpkin puree
  • ½ tsp. coconut oil
  • ½ an apple (any variety), thinly sliced
  • ¼ of a white onion, chopped
  • curry powder, cumin, ginger, cinnamon, cloves (amounts vary by taste)

Simple ingredients for a simple, but delicious, soup.

Instructions

  1. Add the coconut oil and chopped onion to a small skillet set over medium heat, and allow the onion to cook until it starts to brown; ~ 3 minutes.
  2. When the onion begins to brown, add the sliced apple, stirring until combined.
  3. When the apple begins to soften, add your spices. I never measure mine so these are estimations, but I use approximately ½ tsp. curry powder and cinnamon, ¼ tsp. cumin and ginger, and a few dashes of cloves.

    I know that the combination of apples, onions, and curry powder may sound like an extremely odd one, but trust me, be brave, and try it out; I promise you that you won't be disappointed.

  4. Reduce the heat to low, cover the skillet, and allow the apple and onion to continue cooking for ~ 5 minutes.
  5. While that’s cooking, combine the veggie broth and pumpkin puree in a medium sauce pan, and set it on the stove over medium heat.
  6. When the apple finishes cooking, add it to the sauce pan containing the veggie broth and pumpkin, and bring the whole thing to a boil.

    Not only does the whole process of cooking leave you with the promise of a comforting bowl of hot soup, but it also fills your kitchen with the mouth-watering aroma of cinnamon and curry.

  7. Once it begins to boil, cover the saucepan, reduce the heat to medium-low, and allow it to simmer for another 15-20 minutes.
  8. After 20 minutes, remove the saucepan from the stove and allow it to cool slightly before pouring the contents into a blender. An immersion blender would also work.
  9. Blend until smooth, pour into a bowl, and enjoy!

    The whole recipe makes approx. two cups of soup; perfect for a single serving. I've heard that you can actually COOK soup in the Vitamix, but the idea kind of freaks me out, so I stick to using the stove to cook and the Vitamix to blend... maybe I'm just old fashioned.

And there you have it; one delicious bowl of soup guaranteed to take the chill out of even the crispest of fall days. The whole recipe is for one serving, but it’s easily scaleable to serve more. I made a huge pot of it a few days ago, and I’m actually tempted to say that it tastes even better once it’s been allowed to sit in the fridge for a little while. In any case, it’s great with the addition of a grain (rice, bulgur, noodles), as a base to a bean/lentil and veggie stew, or just straight up on it’s own with a couple of sandwiches on the side…

It was a slightly chilly day (again), so today's lunch was a bowl of hot soup with two sandwiches (one with avocado, the other with egg salad), and some steamed broccoli.

And on a quick and final note, guess who’s birthday it is tomorrow! No, it’s not mine. Remember this little pillow-stealing bundle of fur?

It's her birthday and she'll steal pillows if she wants to. But who am I kidding? She'll steal pillows even if it's NOT her birthday...

Mmm hmm… it’s actually her birthday tomorrow; or at least it is according to the one that I picked out for her. I don’t know exactly when she was born since I picked her up from the shelter as a stray and they couldn’t tell me, but after some good old fashioned adding, subtracting, and carrying of the 2, I figured that she must have been born more-or-less around this time, and August 20th seemed like as good a date as any. In any case, she’ll be 7 tomorrow (eeeeep!), which means I have to bake up a doggie-friendly cake and lovingly torment her by putting a pretty party hat on her head and singing her a Happy Birthday or two. She’s got it rough, I tell ya…

    I love fall, too. It’s my favorite season of all! I love the weather, the colors, the food, the clothing, and the fact that I’m not sick of school yet. =P

    Sorry about your treacherous car ride! I hate being “stuck” in a car, be it because of traffic, because my bladder is on the verge of an explosion or because I’m famished beyond belief, it’s just an awful position to be in! Glad you made it out alive heheehe. =P

  2. I am a HUGE fan of soup.. though nothing too exotic. My favourites are homemade vegetable (my mom has makes the best in the world, I’m convinced!) and cream of mushroom :)

    Wish your little pup a happy birthday from me! Conicidentally, my oldest dog is going to be seven pretty soon too! … AND my birthday is in the fall as well, which pretty much makes it the best month ever.

    Lovely! I always saw that soup on your blog and wondered where it came from… you always would say, “I had a bowl of pumpkin-curried apple soup” like it’s no biggie, and it looked so original and cool! I want to try that, although honestly, I’ve never cooked with canned pumpkin before.

    I’m a tomato soup fan, although ED made me stop eating my favorite brand when it found out there was sugar added. I also like minestrone and lentil soup, and I’m a HUGE fan of chili.

    The soup looks SO good! I love the flavors and colors of fall, too, and don’t mind the need for sweaters and hoodies…until it gets TOO cold. And I really can’t wait to be able to really cook and bake things.

  8. You pretty much nailed my favorite type of soup – anything thick with pumpkin, and I’ve made an apple-pumpkin soup before, they’re so good! I also like anything with chickpeas or lentils mashed up to make really thick soups – anything that isn’t watery and makes you fish for your veggies. I made a curried cauliflower and lentil soup once, you could give that a try? Just cook the cauliflower and lentils in some broth, set aside a few lentils and blend the rest of the soup, add the lentils back in and there you have it.

    When we had our dogs we would get them some kind of treat and wrap it up and let them tear the paper to shreds. It’s something that my Aunt and Uncle started with their dogs. Just giving them a treat and some extra attention goes a long way.

    I miss them dearly…

    I love curry, I love apple, I love pumpkin and I love soup… You are a genius, Amanda, and I would kneel before you and kiss the ground you walk on if I could!
    It’s slowly turning into Spring here, but I would do anything for it to be permanently Autumn. It’s the season of hot coffee and breakfasts, sitting by the fire wrapped in a blanket reading a good book. And munching on sandwiches and soup!

    Every time I see a photo of your pooch, I go all melty and mushy – she is absolutely adorable. You make quite the pair! She is one lucky dog, and you are one lucky owner.

    My pup will be getting a birthday next year! His birthday is conveinently close to mine, so perhaps we’ll throw a joint party. You and your lovely companion are invited! ;)

  12. Ahhh your puppy looks a lot like mine! :) She’s a cutie- tell her happy birthday for me..and from all of us I’m sure! My animals are either unregistered or strays so they dont have “official” birthdays..but for my cat and horse, we all share the same birthday so they get a little extra treat on that day.

  13. I don’t actually crave soup often- even in the winter. I think chili is something that takes it’s place. But you can’t beat a good bowl of baked potato soup… mmm So filling!

  15. Your dog always makes me wish I were in a deep sleep across a huge pillow. She looks so peaceful and comfy! And SOUP!! I haven’t touched that fella since May-ish ’cause of all this heat. I looove a good home-made veggie broth, loads of soft veggies, garbanzos, brown rice, all of that good business. Your creamy soup looks delicious! I need to buy curry powder and tackle this recipe.

    Oh and I finally found pumpkin puree and it’s the same brand as yours! I feel rad :D

  16. Happy Birthday to Kaiah! And autumn (as we Brits call it) is one of my favourite seasons too – I can’t wait to see the changing leaves, and Art PhD Lady and me are doing another potion mixing session in the park once autumn arrives…

    There’s nothing quite like a yummy warming soup for those colder days…for me it’s best served with a hunk of crusty bread ;)

I’m sorted with what’s for dinner for me today :) As for other soups, I love roasted butternut squash (apple goes nice in here too!), minestrone, lentil and butterbean with vegetables. Ohh and the classic carrot and coriander!

  20. I am a fan of soup too, but I don’t like pumpkin (am I normal??) and I don’t like fruit in savoury dishes. Like ananas in exotic meals. And apples in soup ^^. But your soup looks yummy because it’s so thick. I only like those kinds (Why am I so picky?)
    When I read your posto I immediately thought of a warm woolen sweater, a sofa and an interesting book, or someone to talk to. Lovely.
    I used to love my grandma’s tomato soup, it was spicy and she always told me the secret ingredient were bat’s ears, ahah. She says she’s going to tell us the real recipe only when she’ll be dead. I hope I will be waiting for a long time.

  22. Thanks for the soup recipe. I’ll add that to my collection to try out this fall. I make a potato kale soup that also gets blended, and tastes like mashed potatoes; it’s probably my favorite, though I do like to experiment with different tomato-based soups as well.

    Oh my goodness – EXCELLENT timing on that recipe! I’ve been on such a soup kick lately, I guess thanks to the impending fall season (and the temperatures dropping to a frosty 23 *gaaasp*). It’s been all about the wrap+soup+sauteed-veggie-of-choice combo for lunch lately. Lurrrve. Esspecially the thick, chunky hearty soups. Balller.

    Favorite? Oh sheesh….you know what? Something about split pea, and a really rich tomatoe gorgonzola bisque would have to top the list.

  26. I love soup now, but I actually wasn’t a big fan of it when I was younger. I don’t have a specific favorite, but I like brothy soups with veggies and grains the best. I will definitely be trying your soup recipe this Fall! I am a sucker for anything made with pumpkin. I always acknowledge my animals’ birthdays. I usually buy them a special treat or toy.

    It is not (just) that my birthday is in fall that makes me love this time of the year, there is something so comforting and relaxing with fall. You can be yourself, curl up if you want to or enjoy a breathe of fresh air. And all that lovely food, such as soup. Thank you so much for this recipe, I can almost feel the lovely smell :)

    I am a huge fan of soup, they give you an opportunity to be creative and be filled by comfort and satisfaction. My favourite soup is a tricky question.
    Probably good ol’ broccoli soup or vegetable soup. Barszcz and zupa grzybowa are also really good.
    And, my soup must be accompanied by slices of warm bread.

    Haha, reading about your beautys birthday made me smile, because I did the same thing to calculate Bamses birthday. I usually buy him his favourite treats, and also..uhm… give him an extra slice or two of his favourite human- food : cheese ;)

  31. I’ve mentioned numerous times on my blog that I have a bladder the size of a peanut, so I totally feel ya. Try watching Eat, Pray, Love (a three hour movie!) after having a few chugs of water before!
    Anyhow, wish your dog a happy birthday from me! nuzzle her to death, or something. We used to give my dog like a whole chicken for her birthday, but I dont know if shes vegetarian or not…
    And I must say I love theat you have two different kinds of sammies. I can never decide! so why not have one of each! simple, but your genius!

  34. Ohhh I’ve actually seen a similar soup in a magazine last fall, but the ingredient lists were sooo long that i just didn’t bother. yours is simple and straightforward :) i like cream of potato or cream of broccoli soup too!

    oh man, traffic+hunger+bursting bladder = not fun. i’ve been there, too, and it’s probably the closest feeling to hell…

  37. girl, your a total genuis! that soup looks completely to dieee for! it made me want to lick the screen! haha just kidding :P i have totally been in the mood for soup lately, my favorite is peanut sweet potato coconut soup that i made a couple days ago, its so freaking delicious! i love peanut falvored anything i guess thats why i love this soup! im also a huge fan of minestrone, all the fresh veggies make me drooooool! whenever its my dogs birthday i take her to a store near our local mall and they give out doggiue treats with icecream! the only bad thing is, now she wont eat a treat without icecream ontop! she loves it there and its the perfect birthday treat1 have a great day <3

  39. This looks like an amazing soup! So simple and such wonderful ingredients. I love it! I laughed out loud at your comment about cooking soup in the vitamix…I sadly can’t afford a vitamix (everyone says it is the ONE must have kitchen tool, but oh well…I’m doing okay with my old school blender for now) but I have also heard that you can cook the soup in it. Well, maybe not exactly cook it, but you can certainly heat it up because if you leave the vitamix running for a while, the speed of the blades creates heat which will make your soup warm. This is only necessary if you want the soup to be raw though…otherwise you can just heat it on the stove. I agree that it’s kind of scary to think about my blender heating up…I wouldn’t want it to explode on me!

I think that is incredibly true. I admit that I am always on the go and I rarely take time to slow down and appreciate nature or the beauty around me. This really saddens me…I want to be the type of person who can go out for a walk and just stop when something wonderful about nature catches my eye, just so that I can take in all of its beauty. I really need to work on slowing down and appreciating the beauty in the world…I think a lot of people do! Thanks for the reminder, love.

  40. I LOVE SOUP! split pea, lentil, borscht, carrot ginger, cream of broccoli, habitant, chicken, vegetable, and corn chowder are my favs <3 and homemade is the best! i like my soups light too, no oil- and piping hot!!
    haha i gave my pet fish some more sea greens and plants on their birthday so they could swim around 'new scenery' haha <3

  41. I LOVE SOUP! My favorite memories are of eating Kurbis Creme Suppe (Pumpkin Cream Soup) and Spargel Creme Suppe (Asparagus Cream Soup) in Germany when the two would come into seasons. Nothing compares! I did make a Carrot Leek soup once, though, and that was delicious.

    My cat is a shelter kitty (as have been most of my pets throughout my life) so he has no official birthday.
    My old Bichon Frise, Ripley, had an April Birthday, though. We celebrated that with two other families and their dogs who would play with Ripley. We went all out with dog cookies and party hats… the dogs were not a fan of the latter.

  45. wow your soup looks lovely! apple and pumpkin – yum. :) yeah im a great fan of soup, I find it’s a great way to get nutrition in! I had raw soup today – meaning, not cooked! – just blend 5 tomatoes, 2 ripe mangoes, 8 pre-soaked sundried tomatoes and you get TOMATO MANGO SOUP! No water needed at all. It makes a very thick, rich and creamy tomato-ey soup. :) Garnish with celery. Unheated soup is great cos the enzymes and nutrients are all still intact.

  64. Soup is the one thing that can pull me out of a funk (hm, maybe chocolate can, too…), especially when it’s cold outside. If I have a stomach ache/ am sick/ feel like crap I always turn to soup. c: Rich, hearty soup especially can both stave off hunger and warm a cold tummy. 0:-)

    Yeah you guys, this is REALLY strange… I used to never read her blog religiously everyday or anything, but since I had become familiar with it, I know that THIS long of an absence is unheard of from Amanda, so I literally check her blog everyday now to see if she’s come back!

    I worry because it seemed like she was really quite far in her quest for recovery (especially physically, from what she wrote), so IF something happened to her it would just be so bizarre but above all, very sad… :[

    On second thought, she HAS been taking longer and longer breaks from blogging leading up to this last post… she was really pretty conflicted about the whole blogging thing if you think about it. So maybe she decided to just leave it and not return to this internet world??? Eh… you’d think she’d at least write a farewell note? I don’t know. Just speculating! But this is quite the mystery… :\

    k, so i just finished searching all the alberta obituaries for the past 60 days (yes, im a loser).. no amandas to be found.. that was her first name right?.. the more i think about it the more it seems like someone out there is a very, very good story teller… i tried typing her email into the facebook people finder and some other person came up with no picture.. (as you can tell, i hate unsolved mysteries so this is really bugging me!)

    also, i live in canada as well.. and greek yogurt was extremely hard to get back when this blog started.. it’s getting more available now but anyways, i just thought it to be interesting that she seemed to use greek yogurt quite frequently and never mentioned the fact that she would have likely had to make it herself or buy it in the states…

    I still don’t believe someone would make this persona up and have this fake blog or a blog about someone other than themselves… unless she just didn’t want her real picture and real name to be out there (I have a play on words type last name on Facebook actually! lol) but also, searching for her email (I’m assuming you guys are using her “seek” email) probably won’t do you any good because she only used it with respect to this blog. She probably has a different, main email address that we don’t know.

    I too am Canadian and have had no problems buying Greek yoghurt in these parts, even the popular US brands. Also, I looked back to the emails I got when she commented on my blog and clicked the “look up” button and she was, in fact, writing from Alberta (based on the ISP)…I just don’t know. I hope she’s okay. There had to have been SOMEone she was in contact with on the blogosphere…

  86. I think she maybe she felt it was time to go to impatient treatment for her ED? I was i treatment for over three months and I had very little time to be writing blogs and whatnot. Some places dont even allow their patients internet access. Just a thought. I think shes ok, maybe shes just getting some help.

    Ive been through some blogs in my time – most of them “average”, and when stumbling across yours last night just y chance, I knew it was going to be a little different to the ones I had previously visited. Firstly, you share my love of Raw, healthy foods, but secondly, you understand the hell that is anorexia. And It was only as I continued to scroll through you many (and oh so addictive!) photos and entries filled with so many delicious words, recipes and musings did I realise how much your blog had already helped me in my recovery.

    Im sick right now. Ive been sick since I was 12 (im now 19) and with a BMI at just over 13, Im fighting to keep myself out of hospital and above water. I want recovery (through raw foods)…but thats as much as I know. I have no idea where to start…So I guess this is a thankyou for being, well, just wonderful.
